You may have noticed that beautiful dark purple vegetable – eggplant – at local markets. They are in season now, so enjoy them. Eggplant is very versatile. You can bake, boil or fry them. They are great in casseroles or as a side dish.I remember in 1960 I worked as a lifeguard, waiter, recreation assistant and dishwasher at a resort in Pennsylvania’s Pocono Mountains.One night I ate 33 slices of fried eggplant. I think that is still the record.
