Two Prospect residents who met on the trading floor of the Chicago Board of Options Exchange are opening a sandwich shop known for toasty warm sandwiches and hand-dipped shakes.
Potbelly Sandwich Shop opens Nov. 8. This is the brand’s second location to open in the state, joining an existing location in Florence.
Located just steps from Fourth Street Live at 302 S. Fourth St., in the Marion E. Taylor Building, the new sandwich shop is owned and operated by Marcus Eddy and John Vinci, Prospect residents who met on the trading floor of the Chicago Board of Options Exchange and later worked side by side for a Chicago-based financial services firm.
“We can’t wait to introduce Louisville to the Potbelly experience and proudly welcome our neighbors in the community to be a part of the excitement,” said Vinci. “We have been passionate Potbelly fans for many years and are deeply committed to engraining Potbelly into the fabric of the community. Building long-lasting relationships with our customers and the neighborhood organizations that serve Louisville is at the heart of who we are and what Potbelly stands for as a brand.”

The unique Potbelly experience is defined by its combination of toasty warm sandwiches, hand-dipped shakes, tasty made-to-order salads, as well as friendly and lively people, eclectic décor and live, local music.

Eddy and Vinci will jointly head up the brand’s new operations, with support from the talented team of local residents they have hired as associates to help run the sandwich shop.
The location is open from 11 a.m. to 7 p.m. Monday through Thursday and 11 a.m. to 8 p.m. on Friday and Saturday.
