The popular local chain Homemade Ice Cream and Pie Kitchen is now open on U.S. 42 at the corner of River Road.
Pie Kitchen owner Adam Burckle said the company has looked for a Prospect location for about four years — and thinks he found the perfect spot in the former Java Brewing Company.
“It’s historically an old train station,” he said. “It’s nice that it will still be a gathering place.”
It is the 10th store for the company, which specializes in pies, cakes and homemade ice cream.
The location includes a full-service bakery with a professional baker on-hand, Burckle said.
A variety of treats will be available by the slice — and customers will be able to purchase whole pies or cakes, and have them customized.
It will be the third location with an open kitchen, where visitors can interact with the baker and watch cakes be decorated.
“It’ll be like ‘Cake Boss’ meets an old-fashioned neighborhood bakery,” Burckle said.
Most locations are open until at least 9:30 p.m. during the week and later on weekends, which Burckle thinks will make the Prospect location a neighborhood hot spot.
“It’ll be great if you just want to get out and unwind,” he said.
His favorite part about the new location? The patio.
Kathy Jacobs, executive director of the Prospect Area Chamber of Commerce, believes that support is there.
“As a family-oriented business, they’re a perfect fit for the location in the Prospect Point Shopping Center,” Jacobs said. “We believe the community will welcome them with open arms.”
The Prospect Homemade Ice Cream and Pie Kitchen is open seven days a week. Hours are currently 10 a.m. to 9:30 p.m. Monday - Thursday, 10 a.m. to 11 p.m. Friday and Saturday and noon to 9 p.m. Sunday.
